All About Food: March Edition
Sunday, March 06, 2011Hot diggity dog, it’s already the second week of March! February wizzed by so fast I was barely aware of the new month and certainly didn’t have a meal plan ready. So we spent the week eating out or coming up with really odd combinations of food from whatever was on the shelves—see what happens when I don’t plan? We end up eating pasta with deli chicken, peas, and ranch dressing on it. Need I say more?
Since March has five weeks, we still had plenty of meals to plan. Here’s what we came up with…

You might notice a new theme: Salad Sundays and Meatless Mondays! Since we restrict our “bad” eating to the weekends, I’m usually bloated and feeling gross by Sunday and ready to return to my salads and hummus. So Salad Sunday, here we come! We started today after church with the new Thai Chopped Chicken Salad from Panera for only 390 calories—it was delicious, filling, and full of flavor. A much better option than our typical post-church Chipotle run… {Not that I don’t l-o-v-e the ‘potle.}
But I digress… Our February faves are as follows {Don’t you just love alliteration?}: Bethenny’s Creamy Mushroom Pasta {Once you get past the $20 truffle oil…}, Chicken Divan {made it again for my Bible study when I hosted}, and the Chicken Pot Pie Soup {great for leftovers}. I give a B- to the Tuna Noodle Casserole and the Chicken Piccata. There was nothing wrong with them, they just weren’t my favorite flavors… And of course, Tyler is still begging for more Chicken Enchiladas.
Sadly, our schedule was off at the end of the month and I didn’t get to make the Crème Brulee French Toast—never fear it’s back on the rotation for March! I can’t wait to try it, as well as the Chicken & White Bean Stuffed Peppers and the Asian Glazed Drumsticks.
My breakfasts have been all over the board lately… I’m missing my pumpkin cream cheese and bagel thins, but my friend Heather shared her granola recipe with me when she visited, so that’s my current kick—I’ll share the recipe tomorrow!
