It's been foreeeever since I've done a "Show Us Your Life" and the last few weeks have been Christmas themes, so even I'm surprised I haven't been playing along. Things just get busy, I guess...
Anywho, I'm going to share my recipe for Pinebark because I pretty much mention it every other post during the holiday season. It's a childhood favorite of mine and now a Christmas staple around here. Upon first glance, the ingredients may seem an odd combination, but seriously-- this stuff is like crack (or so I hear...). It is also the reason that I probably should have been wearing Spanx underneath my bathing suit yesterday...
Warning: this recipe must be followed to a T.
1+ stack of Saltine (and Saltine ONLY) crackers
2 sticks of butter (not margarine)
1 c. firmly packed brown sugar
12 oz. of semi-sweet chocolate chips
Preheat oven to 400. Line 18 x 12 in baking sheet with aluminum foil and place whole crackers in a single layer. Combine butter and brown sugar in a small saucepan; boil 3 minutes. Pour or spoon mixture over crackers, carefully covering all crackers and corners. Bake for 7 minutes (but watch closely in case it starts to burn). Remove from oven and pour chocolate chips over all. As the chips melt, spread over all crackers. Place pan in freezer to cool. Once hardened, break into pieces and store in refrigerator or freezer.
